Ingredients

The Bean Base

  • Dried Gigante Beans: 1 bag, soaked overnight and rinsed. (Shortcut: Swap for 2 cans [15 oz each] white beans like Cannellini or Great Northern, rinsed and drained).

Flavor-Packed Cooking Liquid (For Dried Beans)

  • Water: 4 to 5 cups

  • Better Than Bouillon: 2 tbsp (Vegetables or Chicken flavor)

  • Bay Leaves: 2 whole leaves (adds deep savory undertones while pressure cooking)

  • Ground Cumin: 1 tsp (for a subtle earthy warmth)

Fresh Salsa Mix & Dressing

  • Cherry or Grape Tomatoes: 1 ½ cups, quartered ( salted lightly and set aside; these hold their shape better than diced globe tomatoes)

  • Red Onion: 1 medium, finely diced

  • Fresh Cilantro: 1 cup, finely chopped (leaves and tender stems)

  • Jalapeños: 1 to 2, finely diced (seeded for mild flavor, or keep seeds for heat)

  • Lime Juice: Freshly squeezed juice of 3 juicy limes

  • Extra Virgin Olive Oil: 3 tbsp (Optional: omit for excess-hormone protocols)

  • Garlic: 1 clove, finely grated or minced (delivers a pungent, savory punch)

  • Sea Salt: 1 tsp (adjust to taste)

  • Black Pepper: ½ tsp freshly cracked

Optional Mix-Ins

  • Avocado: 1 ripe avocado, cubed right before serving

  • Charred Sweet Corn: 1 cup for a smoky crunch

Instructions

1. Pressure Cook the Gigante Beans (Instant Pot)

  1. Add your soaked and rinsed gigante beans into the Instant Pot insert.

  2. Pour in 4 to 5 cups of water, 2 tbsp Better Than Bouillon, bay leaves, and ground cumin.

  3. Lock the Instant Pot lid and set to High Pressure for 8 minutes.

  4. Allow a Natural Release (NR) for 45 to 50 minutes until the beans are tender but still hold their shape.

  5. Drain off excess liquid and allow the beans to cool completely to room temperature.

(If using canned white beans, skip this entire step and proceed to Step 2!)

Whisk the Fresh Lime Dressing

In a large mixing bowl, whisk together the fresh lime juice, optional extra virgin olive oil, grated garlic, kosher salt, and freshly cracked black pepper until combined.

Combine the Salad

Add your cooled gigante beans (or drained canned beans), quartered cherry tomatoes, diced red onion, diced jalapeños, and chopped cilantro directly into the bowl with the dressing.

Marinate and Serve

Gently fold all ingredients together until evenly coated. Let the salad rest at room temperature for 15 to 20 minutesbefore eating so the beans absorb the bright lime juice and seasonings.
