Simple Fresh Herb Chicken/Turkey Breast Patties

This recipe is designed for ease and flavor, using lean ground chicken or turkey breast infused with fresh herbs and garlic – no breadcrumbs, no added fats, and perfect for your protocol.

Prep time: 10 minutes

Cook time: 10-15 minutes


Ingredients:

  • 3-4 packages of lean ground chicken breast or ground turkey breast

  • 4-6 tablespoons of finely chopped fresh herbs (e.g., parsley, cilantro, dill, oregano, chives, or a mix) I have been doing 2 bunches of flat leaf parsley.

  • 2 bunches of spring onions. Chopped finly. 

  • 4-6  large clove garlic, minced very fine or grated

  • 2 teaspoons sea salt (or to taste)

  • Optional: Pinch of black pepper and or some chili flakes

  • you can also add in cooked lentils or cooked white beans.

    These patties I can be great for breakfast, lunch or dinner or snacks!

Equipment:

  • Mixing bowl

  • Large non-stick skillet or cast-iron pan

  • Make a small test patty to taste the flavor and add more as needed. 

Instructions:

  1. Combine Ingredients: In a medium bowl, combine the ground chicken/turkey, finely chopped fresh herbs, minced garlic, and sea salt. A pinch of black pepper.

  2. Form the Patties: Gently mix the ingredients until just combined. Don't overmix, as this can make the patties tough. Divide the mixture into equal portions and form each into a flat, round patty.. Make sure they are uniform in thickness for even cooking.

  3. Cook the Patties: Heat a large non-stick skillet or a well-seasoned cast-iron pan over medium-high heat. No oil is needed for these lean patties. I use some olive oil in the warm pan.

  • Carefully place the patties into the hot pan.

  • Cook for 5-7 minutes per side, or until golden brown and cooked through. The internal temperature should reach 165°F (74°C).

  • Tip: Avoid pressing down on the patties with a spatula while cooking; this can squeeze out juices and dry them out.

  1. Serve: Remove from the pan and let rest for a minute or two before serving. This helps keep them juicy.

Serving Suggestions (Protocol Compliant):

  • Pair with your 1/2 cup of beans for a complete meal.

  • Serve alongside 1/2-1 cup of steamed mixed veggies.

  • Chop and add to a large bowl of leafy greens
